I live in an agricultural state (Ohio). Every summer and fall I end up with ridiculous amounts of fruit from farmers' markets and U-Pick adventures. Canning fruit allows me to enjoy some of summer's bounty during the long Midwestern winters, and making jam is the easiest type of canning there is. Jam sounds intimidating, but it is actually super simple and cheap to make. It's basically fruit, sweetener, and some kind of acid (like lemon juice or citric acid) simmered in a pot and then cooled.I picked up this jam cookbook to go beyond my usual repertoire of basic strawberry and apple jam. There are lots of creative recipes that make use of extracts and spices, such as Almond Strawberry and Baked Pear with cinnamon. I would never have thought of using pineapple or pumpkin to make jam, but it sounds delicious. I'm especially looking forward to trying the vanilla blueberry flavor next summer.As a health-conscious person, I appreciate that the book includes lots of sugar-free jams and also provides calorie information for each recipe.A quick note for jam-making beginners: This cookbook explains the basic process of canning jam in each recipe, but doesn't go into details about the equipment you'll need, etc. In order for jam to be shelf-stable it needs to be put into hot canning jars that are sealed and boiled. When I first started making jam, I didn't have any special tools and I had success with just keeping my cooled jam in the refrigerator. (Try this at your own risk and make sure to consume the jam quickly so it doesn't spoil.)Now that I know how easy it is to make jam from scratch, I don't think I'll ever buy it at the supermarket again. With this cookbook on hand, I can make gourmet jams that even fancy grocery stores don't carry.

I have been making jam for a couple of decades and l have never seen such a variety of recipes to choose from. All recipes are well laid out and easy to follow so even someone who has never made jam before would have no problem.

This one has sugar free recipes which is hard to find! And tons of great flavors and mixes of flavors. Great instructions as well, easy to follow.

Perfect recipes. I tried one right after reading through the book and it tasted great. First book i read on the subject so i think it was suitable for me as a beginner.
